Packed with flavor, baby carrots are a healthy snack. Use as an attractive colorful edible garnish. Grate over salads for flavor and color. For an easy appetizer, serve whole with dip or salad dressing. Tasty and impressive, precook one-pound washed baby carrots in boiling salted water until tender but firm. Melt one-fourth cup unsalted butter with one-fourth cup Marsala wine; cook until bubbly. Add carrots; cook over high heat until mixture thickens and carrots are well coated, about 3 minutes. Season with salt and pepper to taste. Serve with roasted or grilled meats. Carrots love to be enhanced with parsley, basil, ginger, mint and chives. To store, cut off greens to prevent moisture loss; place in plastic bag; refrigerate.
