Ranging in size from a walnut to a goose egg, baby artichokes are not a separate variety, just smaller versions of regular size artichokes. Actually, it's all about location, location, location. Picked on the lower part of the artichoke plant, protective fronds have shielded these artichokes from the sun which stunts the artichoke�s growth.

Easy to prepare, baby green artichokes typically do not have a fuzzy choke and have fewer outer leaves. Using the same preparation method as large artichokes, baby artichokes may be enjoyed whole, halved or quartered. Hollandaise sauce, vinaigrette and mayonnaise are classic artichoke accompaniments. To save calories, use light or fat-free yogurt and mayonnaise, mixed half and half. To store, refrigerate in a plastic bag.
