Enoki Mushrooms

Description
Rather strange looking and somewhat resembling a peculiar type of knitting needle or an exotic oriental white hair pin of sorts, the enoki mushroom is cream colored and wears a small umbrella-shaped cap.

Its graceful slender stalk can grow to five inches in length. Smooth, shiny and firm-textured, the flavor is definitely not that of a typical mushroom. Mildly flavored, enokis offer a pleasantly crunchy texture. Slightly acidic, peppery and fruity, some claim its unusual-for-a-mushroom flavor is slightly apple or grape-like while others say its taste is reminiscent to that of a radish. Quite different looking from the cultivated enoki, the wild variety sports a bright yellow-to-orange-to-brownish-orange sticky cap.

The fragile enoki is valued for its striking and unusual appearance, as well as for its uniquely different taste. Chefs especially love the enoki for its aesthetic charm.
