Eye-catching and actually a milder flavored version of the red raspberry, the plump golden raspberry offers somewhat of a creamy flavor that some describe as a blend of a banana, an apricot and a raspberry. These little berries are deep yellow when immature and develop a rich amber gold color when ripe and turn red-orange when overripe. Very gourmet, chefs love this berry's unusual color that gives an aesthetic twist to their specialty desserts and sauces.

Enjoy this golden berry treasure simply sprinkled with powdered or granulated sugar and topped with whipped cream. Make luscious jellies, jams, preserves and sauces. Freeze pureed fruit to serve as an elegant sorbet. Toss whole berries in mixed green salads for flavor and color. Add pureed fruit to white vinegar; drizzle over fruit, vegetables or lettuce greens. Make a succulent filling for tarts and mixed berry pies. Serve as an attractive edible garnish. Extremely perishable, this seriously fragile fruit must be used immediately after purchase for optimum flavor and texture. Keep berries dry; do not wash until just before use. To freeze, lay in a single layer on a cookie sheet or platter. Place frozen berries in plastic bags or covered containers; store in freezer. Frozen gold raspberries lose their delicate texture.

An excellent source of vitamin C and dietary fiber, cholesterol-fee, sodium-free and saturated fat-free raspberries contain some vitamin A, calcium and iron. One cup has about 60 calories. Eating five daily servings of fruits and vegetables lowers the chances of getting cancer.
