Description
Dazzling gooseberries comes in all sorts of textures, colors, sizes and flavors. They may be satin-smooth to fuzzy and spiny, opaque to nearly translucent or creamy ivory to white. A berry of a different color, they may be various shades of green or be pinkish to deep purple. Not consistent in size, they may be as big as a cherry tomato or as tiny as a blueberry. Inconsistent in flavor as well, gooseberries can make a mouth pucker with their seriously sour taste or be slightly sweet. The sweetest ones are usually pinkish or purplish. Small to medium-size pale green summer gooseberries and the very large yellow-green to purplish gooseberries are the varieties most often available in American markets. Crisp and highly acidic, these berries characteristically are securely wrapped in a snug fitting taut skin. What all gooseberries have in common, however, is their exceptional good looks and visual appeal.

Do a taste test before adding sweeteners to this berry as its flavor can be destroyed with too much sugar. Gently poach to protect its delicate shape. Poached gooseberries make a delicious accompaniment for meat entr�es. Because of the high pectin content, gooseberry sauces naturally thicken. Spoon sauce over gingerbread; drizzle with fresh cream or top with whipped cream. If a tart taste is desired, serve whole berries as edible garnish for smoked meats. Flavorfully wake up dressing or stuffing for pork, duck, goose, turkey or chicken with its tasty attributes. Gooseberries are perfect for canning in syrup. To store, place unwashed gooseberries in a single layer between paper towels on a tray; refrigerate only a few days.
