Description
Velvety-textured and offering a slightly sweet flavor similar to wintergreen, the delicate pansy offers a fantastic array of vibrant colors. Having a broad color spectrum for an annual, pansies display their loveliness in yellow, white, red, orange, black, purple, pink, lavender, mahogany, blue, apricot and bronze. The flowers may be just a single color or have two or three colors on its little pretty "face".

Charming and very edible, the romantic pansy complements a variety of foods and adds sheer elegance from simple to complex dishes. Toss in salads for color and flavor; drizzle with a favorite dressing or vinaigrette. Toss salad with vinaigrette or dressing before adding blossoms to maintain texture. Small pansies are best used whole. Pull petals off gently; sprinkle on salads and main entrees. Add just before serving to assure freshness and appearance. Colorful and flashy, pansies make festive cake decorations for weddings, birthdays and special occasions. To top cupcakes or cake, shorten stems; arrange flowers close together. Float in herbal teas for an elegant touch. To store, keep in a closed bag; refrigerate. For optimum quality, use within one to two days. To refresh before use, dip briefly in ice water. Always remove hard parts of edible flowers.
