Whether raw, on the cob or the tasty kernels cut from the cob and made into corn salsa, chutney, salad, red sweet corn is simply scrumptious. Although wonderful steamed or boiled, grilling brings out this corn's best flavor and rich color. Add a colorful corny flair to stews, soups and casseroles. Red corn makes great cornmeal. Cornmeal is dried corn kernels that are ground into a fine, medium or coarse texture and is most commonly marketed in yellow or white. Special varieties of cornmeal are made from red and blue corn. Make an edible festive and colorful "cornival"! Blend red, blue, yellow, white, purple, bicolor and tricolor corn to a-maize guests! To store, refrigerate up to five days for optimum quality. If left at room temperature, the red color of the kernels will seep back into the cob.
