Upland watercress produces very small almost square green leaves that are slightly notched on the margins. Offering a snappy pungent flavor, some say this variety is a bit more peppery than common watercress.

Enjoy upland watercress' spunky taste raw or cooked. Briefly steam or braise; enhance with herbs and seasonings. Stir-fries, salads and sandwiches love its zippy presence. Combine with kiwifruit, oranges and grapefruit to accompany smoked meats or roast pork. For an unusual dressing, mix lemon juice, rice vinegar, honey and just a dash of cayenne pepper; drizzle on chilled mixed greens and cress salad. Perk up potato salad. For an excellent sandwich spread, blend chopped cress with low-fat cream cheese. Dress up entr�es with its fresh good looks. Add a touch of class to everyday sandwiches. Pair with chicken and favorite cheese for an impressive sandwich to serve guests. For soup, briefly braise in chicken broth. Ideal as a bed for meat, fish or poultry dishes. To prepare, quickly rinse under cold water; shake off excess water; pat dry. To store, refrigerate in a plastic bag. Very fragile and perishable, use within a day to two.
